Baked Garlic Brown Sugar Chicken

I've seen this recipe all over Pinterest so I had to try it and I'm so glad I did!! This was my third time making this dish and  I love it,  its quick and easy to make so I thought I should share. ENJOY!

Ingredients

4boneless skinless chicken breasts( I used chicken tenderloins) 
4garlic cloves, minced
4tablespoons brown sugar
3teaspoons olive oil

Directions



Preheat oven to 500°F and lightly grease a casserole dish. In small sauté pan, sauté garlic with the oil until tender. Remove from heat and stir in brown sugar. Place chicken breasts in a prepared baking dish and cover with the garlic and brown sugar mixture. Add salt and pepper to taste. Bake uncovered for 15-30 minutes.

My oatmeal

So everyone has heard that breakfast is the most important meal of the day so one of the things that I have focused on is not skipping out on that vital meal. But of course working a full time job and being a full time mom, and not to mention I am so not a morning person, who has time to fix breakfast? So instead of waking up to ramble around the kitchen trying to find something healthy to eat for breakfast before running out the house I found something that works for me.
 My solution was oatmeal and I eat it most days during the week because I work M-F.  I knew the packaged stuff was not the way to go because its heavily processed and has lots of added sugars generally.  I pretty much stick to steel cut oats for the simple reason that in my opinion they reheat better than old fashioned oats, they are both whole grains so its a healthy choice no matter which way you go. So what I do is prepare the oats at night and make enough for about 4 days and store it in mason jars, that way in the morning I grab it and go then I warm it up when I get to work. I use 4 cups of almond milk(vanilla if you choose) you can also use water, bring it to a slight boil add 1cup of the oats and stir it in, add a little brown sugar to taste (optional) turn it of a let it sit, simple as that. I top mine with apples, raisins, and  little cinnamon YUM!!!   Of course you can add any type of fruit or nuts.

SHORT TERM GOALS

I'm trying not to get caught up on that number on the scale because I do realize you can or should be replacing fat with muscle and that will equate to losing inches and not necessarily pounds which is  really what you should be wanting ( a visual difference). But I thought it may be a good idea to set some short term goals for my self just to better track my progress. So for the time being my check point will be set for 6/4/14 the day I leave for Puerto Rico, and I would love to feel comfortable in a 2 piece on the beautiful beaches of San Juan!


 So last time I weighed in ( yesterday morning) I was down to 168 which is 10 lbs down from my top weight 178 and I am now 7 weeks in to this journey and although it is slow progress it is progress. So although my real goal is visual, my numerical goal is going to be 155 by 6/4/14, that's going to be tough but I am going to work towards it and hopefully I will reach it!! 
 I also wanted to share my visual progress which is pretty hard for me to do just because I hate looking at these pics but its the best way to show the progress 
As you can see my problem area is my stomach and that horrible flab at the bottom, It has to go!!! I still have a long way to go but I'm happy with the progress so far.

First run not so great

Well completed my run or walk should I say and that was terrible! But I will get better faster and quicker gotta start somewhere 

Running


So I've never been much of a runner and I've always had little to no endurance. Since I have started this journey the only running I have done has been on the treadmill (not knocking the treadmill, I love it) and the furthest I have achieved is 2miles and that's intervals of running and waking. I really want to get to the point where I can go outside and run for a good distance and eventually get to the point where I can run a marathon. Of course just like with anything else there's nothing to it but to do it! So this morning is where I start I don't know how far I will go or at what pace but I'm going for it! I may get to the end of the street and decide that this was all a bad idea. I've downloaded the run keeper app to track my progress and hopefully with some dedication this can become apart of my daily routine. Wish me luck!

Avocados


 I'm growing to LOVE avocados took me a while but I can finally say I like them now. My favorite thing about them is they are full of fiber ( I need all the fiber I can get, if you know what I mean ) one avocado has 14 grams of fiber in it which is  56% of your daily value. Prior to my clean eating lifestyle change the only time I had tasted avocado was in guacamole or sushi which I love both!!

Starting off  I looked up some smoothie recipes that included avocados,  I really enjoy the smooth texture that it added  so that was a hit. One of my favorites is:
  • 1/2 cup pineapple chunks( I use frozen)
  • 1/2 avocado, diced
  • 1 cup (2 handfuls) fresh spinach
  • 1/4 cup almond milk or water 
  • 1 banana (frozen and cut into slices)
Very simple to make and these are things I generally have on hand anyway. I believe the original recipe included flax seed but I haven't tried that yet but I'm sure that's a beneficial add on . The best thing about smoothies is you can basically throw together whatever mixture of fruits and veggies you like and it will come out great. 



Anyway today for lunch I had an avocado with tuna which is one of my favorite ways to eat it mostly because I love tuna. When I work out in the morning I will have a piece of toast w/ a 1/4 of an avocado and fold it in half its quick and it puts something on my stomach before I work out ( which is very necessary ). I have also tried it w/ cottage cheese which was surprisingly tasty ( really didn't think i would enjoy that ). Just thought I would share one of my favorite new foods!

How Did I Get So Fat?

In high school I was tiny the only issue I had with weight was that I couldn't gain it, even when I tried. When I graduated High school I barely weighed 100 lbs, looking back I was way too skinny but that came naturally to me I  had been "too skinny" all my life . I was very active with dance and cheerleading and my metabolism was on my side, I would have never thought that I would ever struggle with my weight, NEVER!


 Through my college years my diet was terrible ( no breakfast, fast food and tons of pizza ) and I did little to no physical activity other than walking to class, which let me be honest, I probably didn't do as often as I should have. And lets not even get into the partying, drinking and my terrible sleeping habits SMH those were the days ! so over the course of 4 years I managed to gain about 25-30 lbs, not a bad weight but I was so far from healthy or fit that it was ridiculous.






















In Sept of 2009 I received  life changing news, yep I was pregnant!!!  It came as a total surprise ( well kinda )  and I had no idea how much my life was about to change. Through out my pregnancy I gained about  40 lbs and I was eating everything insight ( isn't that what pregnant women are suppose to do??? ) I wasn't the least bit worried about snapping back to my old size after giving birth and no of course I didn't exercise while pregnant ( who does that ? ).


 June 17 2010 I gave birth to a healthy 8lb 9oz baby boy via emergency c section ( scariest thing I ever experienced in life !). By my 6 week check up I was down to 147lbs which I felt pretty good about and I thought  for sure with the combination of breast feeding and a little exercise I would be back to the old Phy in no time, actually even better I  now had some much appreciated womanly curves lol.

But to my surprise it just didn't happen that easy, by the time my son was 6mo old I had pretty much completely stopped breast feeding, my workout routine was anything but routine, and  my eating habits were not good. Instead of losing weight I was slowly starting to gain weight.  I was very unhappy with the way I looked, i just didn't feel like myself and the comments from others didn't help the way I was feeling. I wanted to blame anything I could think of; my schedule, my c section, my birth control ( the Marina IUD which I eventually had taken out because I was sure that it was making gain weight even though my doctor assured me that it wasn't). I even tried some diet pills for a little while, I  was willing to try any and everything other than working out on a consistent basis and eating right lol. Overtime I had reached the weight that I was when I was 9 mo pregnant UUGH!!! I would still go through spurts of being super motivated to eat right or to work out but I was never consistent, I wasn't ready to make the life changes that were necessary to change my body so I added a few more pounds to the scale.





 The saddest part about it is that I knew there were no quick fixes or magic pills or body wraps that alone would change my body I knew exactly what I had to do to!!! I never thought I would see the day that I would be a size 12-14 ( its hard to even type that ) but this is my reality and a about a month and half ago I decided that I was sick of being chubby and I mean really sick of it!!! So I joined the YWCA (Gateway YWCA in Winston Salem NC) down the street from my house and set my goal to go every day.... yes 7 days a week ( There's been weeks that I have fallen a day or two short) but I am doing some type of physical activity every day. I cut out sodas ( I LOVE PEPSI but it had to go ) and I started meal prepping and eating healthy. About 3 week ago I went ahead and splurged on a Personal Trainer, which I feel like was exactly what I needed, I can be a bit lazy at times so its great to have some one to keep me motivated ! I'll get in to more details on what changes I've made in my life at a later time. But to sum it all up I am sick of being chubby so I'm doing something about it !!

I LOVE PASTA!!!!

SO ONE OF MY BIGGEST STRUGGLES IN THIS HEALTHY EATING AND WEIGHT LOSS HAS BEEN MY UNCONDITIONAL LOVE FOR PASTA!! IT IS MY WEAKNESS SERIOUSLY. MY ALL TIME FAVORITE RESTAURANT IS OLIVE GARDEN, FAVORITE DISH IS THE CHICKEN SCAMPI ( NO ONIONS), WE DON T REALLY EAT ONIONS IN MY FAMILY MY BF IS ALLERGIC AND HE HAS CONVINCED MY SON THAT HE IS TOO..... SMH. ANY WAY, LAST NIGHT I WAS DEF HAVING ONE OF MY PASTA CRAVINGS, WHICH HAPPENS OFTEN. IN THE PAST I HAVE ATTEMPTED TO SWITCH TO WHOLE GRAIN PASTA WHICH I KNOW IS A BETTER OPTION, BUT I JUST NEVER REALLY WORKS OUT FOR ME. WHEN I HAD MADE IT IN THE PAST THE TEXTURE WASN'T AND I FELT LIKE IT JUST RUINED MY MEAL! LAST NIGHT I DECIDED TO GIVE IT ONE MORE TRY AND TO MY SURPRISE  IT CAME OUT REALLY GOOD, YAY!!!
I MADE A SIMPLE CHICKEN ALFREDO USING BERTOLLI'S LIGHT ALFREDO SAUCE, WHICH IS PRETTY GOOD IN MY OPINION, I WAS LOOKING FOR A QUICK FIX SO I WENT WITH A STORE BOUGHT OPTION. SEASONED CHICKEN BREAST AND FRESH BROCCOLI , AND OF COURSE THE WHOLE WHEAT PASTA

ANYWAY WANTED TO SHARE MY FIRST POSITIVE EXPERIENCE WITH WHOLE WHEAT PASTA. MY ONLY SUGGESTION IS BE CAREFUL NOT TO OVER COOK OR UNDER COOK, I REALLY THINK THAT WAS THE ISSUE IN THE PAST, I WAS THINKING THEY WOULD COOK JUST LIKE REGULAR PASTA BUT THAT IS NOT THE CASE! OVERALL I WAS PLEASED WITH THE OUTCOME AND MY SON ( 3YEARS OLD ) LOVED IT AND HE IS HARD TO PLEASE

MY FIRST BLOG

YOU ALL WILL HAVE TO BARE WITH ME BECAUSE I AM BRAND NEW TO THE BLOG WORLD, SO I AM NAVIGATING MY WAY THROUGH AS I GO. ONCE I MADE UP MY MIND TO DO THIS I REALLY COULDN'T WAIT TO GET STARTED SO I'M DIVING IN HEAD FIRST! SO WHAT MADE ME DECIDE TO START BLOGGING ?? WELL ABOUT TWO MONTHS AGO I DECIDED TO GET SERIOUS ABOUT GETTING IN SHAPE AND LIVING AN ALL AROUND HEALTHIER LIFESTYLE. NOW I'M SLOWLY STARTING TO SEE RESULTS AND I WANTED TO SHARE, IN HOPES OF KEEPING MY SELF MOTIVATED AS WELL AS HOPEFULLY MOTIVATING OTHERS ALONG THE WAY!!! I IN NO WAY CLAIM TO BE AN EXPERT ON FITNESS COOKING OR ANY OF THAT I ACTUALLY CLAIM TO BE QUITE THE OPPOSITE SO FEEL FREE TO SHARE INSIGHT OR TIPS THEY WILL BE GREATLY APPRECIATED!
